The field list omits the input that differs most between households and least between one household's brews: the water itself. Mineral content and alkalinity change extraction and taste enough that the Specialty Coffee Association publishes a water standard for brewing, and tap water varies by town and by season while bottled or filtered water varies by brand and filter age. A log that records water mass to the gram and water temperature to the degree, but not whether the water came from the tap, a jug filter or a bottle, cannot support the article's own promise that two households' brews can be compared field by field.
